This issue is defining what the concept of “food!!” is. Let us begin by looking at food not as a thing, but as a relationship with the races – the factors in the system of the so-called food cycle in nature, which includes humans and animals, and the natural factors of water, air, sun and soil. Health, among other things, is a consequence of this relationship. When the health of one of these factors is affected, the entire cycle is affected. For example, if the soil lacks minerals, then the grass that grows in it, and the animals that graze the grass, and the person who eats the meat of those animals or drinks their milk will lack it!! A person’s personal health is linked to the health of all elements of the food cycle.

The most important thing to note is that this relationship is between eating food and food as one unit, not as separate food and chemical elements, although the body breaks food down into simple chemical compounds, so the quality of food as one unit is very important. When we take corn as an example, we find that the body generally breaks it down into simple sugars. But the amount and composition of fiber in corn largely determines the speed at which the body releases and absorbs the sugar found in corn, which is called insulin metabolism. This explains why the body does not accept an unnatural substance (it does not grow in the soil or in the wombs!!) which is high fructose corn syrup, which causes human illness because it does not pass through the food cycle.

Through this perspective, it is clear that today’s food, whose natural cycle has changed over the past 150 years (and the fact that the change has affected food since the beginning of regular agriculture) differs greatly from the original image of food. The situation of corn today refers to one of the most prominent nutritional trends, which is first: the shift to refining food, especially starches. Instead of whole flour and unrefined sugar, people (manufacturers and consumers) turned to white flour and white sugar. We will not go into the reasons for this, and the important thing is that this happened at the expense of nutrients (not only vitamins and minerals, but even fiber, the presence of which regulates the absorption of sugar/energy from food) that are lost during refining. Second: The shift from the complex to the simple, starting with synthetic fertilizers that simplify the chemistry of the soil to nitrogen, phosphorous and potassium, which deprived the soil of other important elements such as the microbial life in it, leading to highly refined food on the table. Third: The shift from the quality of food to its quantity, as manufacturers focus on the quantity of what they produce, not on its quality, and this led to a large production of foods that lack vitamins and minerals, and it is similar to financial inflation. From here also spread the lack of vitamins and minerals such as iron, calcium, potassium, magnesium, etc. Between people. Fourth: The shift from foliar to grain. A small number of crops, mostly grains, have captured the attention of manufacturers because they are efficient in converting sunlight, fertilizer, air and water into major nutrients (starches, fats and proteins) that can be converted (by feeding animals with them) into meat, dairy and processed foods. Countless others. But the needs of the human body are much broader, as the consumption of major elements through increased intake of grains leads to various diseases and symptoms, including obesity due to deprivation of the microelements (vitamins and minerals) present in the leaves. Fifth: The shift from the inherited food habits of the peoples to the predominance of the habits of eating the products of modern food processing, which are nutritionally poor. The hype of advertising about 17,000 new food products each year, which is behind an industry estimated at about $32 billion annually, has led to the dire health condition of man today.

In Defense of Food “A book written by Michael Pollan discusses a major issue which, in the author’s opinion, is the cause of the health problems facing man in this age.
